Warm Chickpea and Red Onion Salad
Serves 4
Here is a very easy dish Roger created with a few ingredients floating around at the time. Eaten warm or cold, it is delicious served with a green salad and rice.
2 Tbsp olive oil
1 large red onion, chopped
2 cloves garlic
2 Tbsp cider vinegar
1 tsp paprika
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp black pepper
2 cups cooked chickpeas
1/2 tsp sea salt
1/2 cup water
Small bunch coriander, chopped fine
Heat olive oil in saucepan over moderate-low heat. Saute red onion slowly until starting to soften.
Add garlic, vinegar, paprika, cumin and cinnamon. Turn heat down and continue cooking until onion is completely soft.
Add the chickpeas, salt, and water. Continue cooking until the liquid has mostly evaporated but chikpeas are still moist.
Turn off heat. Mix in fresh coriander.
