Walnut and Sprout Salad

Sprouts are little nutrient powerhouses, chock-full of vitamins and enzymes. We have a friend who swears eating sprouts helped him give up cigarettes and reduced his desire for alcohol! This is most likely due to the fact that when overcoming addictions the body needs extra nutrition as it de-toxifies. Other types of sprouts could be used for this recipe instead of lentils.

Salad:
2 cups lentil sprouts
1/2 cup shelled walnuts, roughly chopped
3 carrots, grated
½ small red onion, sliced fine
4 large leaves of cos lettuce or romaine
1 avocado, sliced
Dressing:
2 Tbsp white balsamic vinegar (or dark balsamic vinegar)
1/3 cup extra virgin olive oil
2 tsp wholegrain mustard
½ tsp sea salt
Black pepper
- Mix lentil sprouts, chopped walnuts, carrot and red onion in bowl.
- Whisk dressing ingredients together and mix with the salad.
- Place the lettuce leaves on four individual plates. Put pile of salad on top of each leaf. Garnish with avocado slices.
