Sweet Spiced Red Lentil Soup with Dates and Apricots
1 cup of whole red lentils (dried) - soak at least 4 hours
1 onion, diced
1 clove garlic, chopped
2 medium carrots, cut into chunks
½ tsp cinnamon
½ tsp ground cumin
½ tsp ground coriander
½ tsp curry powder
10 pitted dates
10 dried apricots
½ tsp salt
1) Gently saute onion and garlic in a little rice bran or coconut oil until soft. Add the spices and fry for a minute until the aroma spreads through the kitchen.
2) Add 5 cups water the dried fruit and the carrots. Bring to a boil and simmer until everything is cooked and soft (about 45 minutes to one hour). Add more water if necessary. Do not stir during cooking.
3) Puree with a stick blender or in a heat proof blender.
4) Add salt to taste.
5) Garnish with chopped coriander or parsley.
