South Sea Dressing

Makes 1 cup



This zesty tomato-based dressing will work with many different salads.  Try it with a mixture of greens or drizzled on roasted vegetables.

½ cup olive oil
1½ Tbsp balsamic vinegar
2 tsp whole grain mustard
1 medium tomato
½ tsp salt
Pinch Cayenne pepper

Slice the tomato into quarters the tomato and remove the seeds.  Chop the flesh.
Place in a blender with the other ingredients.   Blend until smooth.
