Pina Colada Ice Cream

Serves 4

A simple, healthy dessert with a taste of the tropics!

When we have surplus fruit we often freeze it, chopped in small pieces.  Then it only takes a few moments to make a delicious frozen dessert. 

½ pineapple, chopped in bite-size chunks and frozen
½ fresh banana
¼ cup coconut cream

  1. Prepare the pineapple at least 8 hours in advance.  Remove the skin and the tough core. Chop into bite-size pieces and place in the freezer.
  2. Place the ½ banana and the coconut cream in a food processor or strong blender. Blend until smooth.
  3. With the food processor running, add the frozen pineapple pieces gradually – so as not to stress the machine! When all the pineapple is added continue blending until the mixture is smooth.
  4. Eat immediately! This mixture will go completely solid if placed in the freezer, so only make as much as you need.

Variation:

When Anna made this recently she added chopped dates and chopped macademia nuts at the end.  What a treat!
