Lemon Coconut Fish

This delectable combination of sweet spices, coconut, the zesty flavour of fresh lemon, and flakey white fish was a big hit at our house.  The fish stays tender with the addition of coconut cream - a healthy fat.  This recipe is so easy - 15 minutes and it's on the table!

 

4 pieces fresh white fish, about 150 g each
1 onion, sliced in strips lengthways

1 T coconut oil or other healthy frying oil
Several slices of fresh ginger, finely chopped
1 teaspoon ground fennel seed, or grind whole seeds
1/2 teaspoon cinnamon
1/2 tin coconut cream
2 Tbsp soy sauce 

Zest of 1 lemon
Juice of 1/2 Lemon


 

  1. Saute the onion in the oil  Add the sliced onion.  Turn down to a moderate heat and saute for several minutes.
  2. Add the spices. After 1 minute add the rest of the ingredients, except fish. 
  3. Lay the fish in the pan, and put the lid on. 
  4. Gently simmer until tender right through. This usually takes less than 5 minutes, depending on the size of the fish. 
  5. Serve with a salad and perhaps a whole grain, like rice or quinoa.
