Green Pea Garlic Sauce

Makes 2 cups

Great with grilled lamb but may also be served with fish or vegetables.  Use as a salad dressing, by adding a little extra lemon juice, salt and a few tablespoons of water.

1 & 1/2 cups frozen peas
3 cloves garlic
½ fresh chili (or chili sauce to taste)
Zest and juice of 1 lemon
1 tsp honey
½ tsp sea salt
1/3 cup olive oil
Handful of parsley

  1. Place frozen peas in a bowl and cover with boiling water.  Leave for about 5 minutes then drain in a sieve.
  2. Meanwhile place all remaining ingredients in a small blender or food processor (the Tribest Personal Blender is ideal for sauces and dressings such as this).  Add the peas and blend smooth.
