Fresh Quinoa Muesli

Serves 6

Quinoa is protein-rich and easily digested. It is an ideal grain for gluten free breakfast recipes.  Serve this fresh quinoa muesli with yoghurt and enjoy the delicious blend of textures and flavours. Read the recipe carefully first - the first 3 ingredients need to be soaked the previous evening. 

1/3 cup dried apricots, sliced
1/4 cup sunflower seeds
1/4 cup cashew pieces
3 cups cooked quinoa (made from 1 cup dry quinoa)
1 banana, chopped
1 large orange, peeled and chopped
½ tsp cinnamon
¼ tsp ginger powder
Pinch sea salt

  1. In a small bowl place the sunflower seeds and cashew pieces. Cover with plenty of water. In another bowl place the sliced apricots and add just enough water to cover.
  2. In the morning cook the quinoa (recipe below if you need it).
  3. Drain and rinse the sunflower seeds and cashews.
  4. In a large bowl mix all ingredients: Sliced apricots with their soaking liquid, cashews and sunflower seeds, cooked quinoa, chopped banana and orange, spices and salt.
