Coconut Rice

Serves 4

Here's a comforting grain recipe to serve with curries, fish or chicken. With soothing ayurvedic properties, coconut rice is a simple and delicious side dish.

1 cup basmati rice
1 Tbsp clarified butter (ghee) or rice bran oil
1 tsp mustard seeds
1 tsp garam masala
½ cup coconut cream
2 cups water
½ tsp sea salt

Heat clarified butter in a pot.  Add mustard seeds and fry gently until starting to pop.  Add remaining ingredients.  Bring to the boil, cover and turn heat down low.  Continue to simmer about 15 minutes until all liquid is absorbed.  Stand 10 minutes before serving.
