Cabbage with Bacon and Sake

Serves 4

Roger made this delicious treat with an undervalued vegetable; cabbage! Cabbage deserves greater appreciation and once you try this, you’ll understand why!

This makes a delicious protein rich complete meal, when topped with grilled marinated tofu, tempeh, chicken or fish.

1 onion (chopped in long strips)

¼ cabbage (savoy would be lovely if you can get it)

150 g free-range or wild bacon (chopped into pieces)

1 t fennel seed

¼ c  sake (or white wine)

Ground pepper

Pinch salt

1) Fry bacon without any oil. It gives off enough tasty fat to fry the other ingredients in.

2) Add onion and fennel and cook on medium heat until the onion is soft.

3) Add Cabbage and all other ingredients.

4) Put the lid on and steam until the cabbage is just tender.
