Bircher Muesli

Serves 2

Soaking muesli is such an easy thing to do!  You end up with a moist, creamy and delicious breakfast.  Soaking makes the ingredients more easily digested while retaining the vitamins and minerals we need for sustained energy.

There are many possible variations of this recipe. Experiment to create your own style.  Once you settle on a good combination  make a big mixture in a jar, from which to scoop some out to soak each night.

Before going to bed, assemble in a bowl:

2/3 cup whole grain rolled oats
1 – 2 T sunflower seeds
2 T cashew pieces
2 T chopped dates or raisins
2 T dried coconut
1 tsp cinnamon
Juice of ½ lemon 

Add about 1 cup water - just enough to cover everything.   Leave overnight. 

In the morning add fresh fruit, chopped or grated.  For example:

Serve the muesli topped with yoghurt and freshly ground flaxseed.
